Vegan "Tuna" Salad

I really enjoy sandwiches! Especially during the summer time because to be honest it's way to hot to turn on the oven out here in Las Vegas! The temperatures get up to 120 degrees some days! Yup! Way to hot to be cooking, LOL, so this delicious Vegan "Tuna" Sandwich is amazing and so delicious. You can have it on a bed of lettuce and still be satisfied. So good!


Ingredients


1 (15 oz.) can Chickpeas (drained)


4-6 Nori Seaweed Sheets (snack size)


1/4 cup Vegan Mayo


2 Large Scallions greens and white part (chopped)


1/4 tsp Salt and Black Pepper (or to taste)


1 Tablespoons Pickle Relish (sweet or dill)


Whole Grain or Sprouted Bread


Instructions


Add the drained chickpeas in a large bowl. Using a potato masher or fork; mash the chickpeas until they are the texture of tuna leaving it a little chunky.


Add the remaining ingredients (except the bread) to the bowl and mix until well combined.


Place the mixture in an airtight container and put in the refrigerator for at least one hour; over night is best as it will become more of a fishlike flavor.


Once the mixture has sat long enough to get the flavor you desire make yourself a yummy sandwich. You can also enjoy this on a bed of lettuce.


Note: you can add more of the Nori sheets if you want a stronger fish flavor. Also leaving the vegan tuna in the fridge over night will definitely increase the flavor.
