Vegan Spicy Chickpea Stir-Fry


Vegan Spicy Chickpea Stir Fry a new concept in asian cuisine but so delicious! This is a great way to substitute out the meat with chickpeas a healthier source of protein and good for gut health.


Ingredients:

1 can chickpeas, drained and rinsed

1 cup mixed vegetables (such as bell peppers, broccoli, and snow peas)

1/2 cup diced onion

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp soy sauce

1 tbsp sriracha sauce

1/2 cup unsalted cashews

Salt and pepper to taste


Instructions:

In a pan or wok, heat the olive oil over medium-high heat.


Add the mixed vegetables, diced onion, and minced garlic. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.


Add the chickpeas, soy sauce, sriracha sauce, salt, and pepper. Stir-fry for another 2-3 minutes or until everything is heated through.
