Ingredients

1 cup Textured Vegetable Protein (TVP)

1 cup Vegetable Broth (or water)

2 Tablespoons Soy Sauce (or Tamari for gluten-free)

1 Tablespoon Olive Oil (or another vegetable oil)

1 Tablespoon Tomato Paste

1 Tablespoon Nutritional Yeast

1 teaspoon Smoked Paprika

1 teaspoon Garlic Powder

1 teaspoon Onion Powder

1/2 teaspoon dried Thyme

1/2 teaspoon dried Sage

1/2 teaspoon Fennel Seeds (optional, for a more authentic sausage flavor)

1/4 teaspoon Black Pepper

1/4 teaspoon Red Pepper flakes (optional, for a bit of heat)

Instructions

In a medium bowl, mix the TVP with the vegetable broth . Let it sit for about 10 minutes, until the TVP has absorbed all the liquid and is soft.

In a small bowl, combine the smoked paprika, garlic powder, onion powder, dried thyme, dried sage, fennel seeds (if using), black pepper, and red pepper flakes (if using).

In a large skillet, heat the olive oil over medium heat. Add the tomato paste and cook for 1-2 minutes, stirring constantly, until it darkens slightly and becomes fragrant.

Add the rehydrated TVP and soy sauce to the skillet and cook for about 5-7 minutes, stirring occasionally, until it starts to brown.

Sprinkle the seasoning mixture over the TVP and stir well to combine. Continue cooking for another 2-3 minutes, allowing the flavors to meld together.

Add the nutritional yeast and stir to combine. Cook for another minute or so until the TVP is well-coated and flavorful.

Remove from heat and use immediately as a topping for pizzas, with tofu scramble in pasta dishes, or as a filling for tacos and burritos.
