Yummy Quinoa Fried Rice is a quick and easy go to if you are in a hurry. You can swap out the vegetables with any that you have in your home at the time such as broccoli, asparagus, bell peppers.
Ingredients:
1 cup cooked quinoa
1 cup mixed vegetables (such as carrots, peas, and corn)
1/2 cup diced onion
2 cloves garlic, minced
1 tbsp sesame oil
2 tbsp soy sauce
1 tsp grated ginger
Salt and pepper to taste
Instructions:
In a pan or wok, heat the sesame oil over medium-high heat.
Add the mixed vegetables, diced onion, and minced garlic. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.
Add the cooked quinoa, soy sauce, grated ginger, salt, and pepper. Stir-fry for another 2-3 minutes or until everything is heated through.
