Vegan Oatmeal Pancakes w/Blueberry Syrup

Do you want to make healthy Oatmeal Pancakes that are vegan friendly and delicious! Well this pancake recipe uses a combination of rolled oats and organic flour to create light, tender, hearty pancakes that are easy to make.


Ingredients


1 cup Organic All Purpose Flour


1/3 cup Oat Flour (or 1/3 cup all purpose flour for plain pancakes)


1 tsp Baking Powder


1 tsp ground Cinnamon


1/4 cup granulated Sweetener of Choice (I used monk fruit)


Pinch of Salt


1/4 cup Vegan Egg Substitute (or Flax Egg 1 TB ground flax + 3 TB Water let sit 5 minutes or

2 Large Eggs for standard pancakes)


3 Tablespoons Vegan Butter


1 cup Vegan Buttermilk (1 cup nut milk + 1 tsp Apple Cider Vinegar) let sit 5 minutes


Coconut Oil or Butter to grease the pan


Instructions


In a large bowl mix together the all purpose flour, oat flour, baking powder, cinnamon, sweetener and salt until well combined.


Mix into the bowl the eggs or egg substitute, vegan butter and a small amount of the buttermilk at a time to get a pancake consistency, until smooth. You may have to add a bit more all purpose flour to get a slightly thicker batter. Allow the batter to sit and rest for about 4 minutes before you cook with it.


Put a frying pan or griddle on the stove and turn the burner to medium heat. Once the pan is hot make your pancakes by scooping about 4 tablespoons of batter onto the griddle forming a circle with it. I like to use a ice cream scoop as I think it makes the perfect size pancake.


Once the pancakes form tiny bubbles and the edges are dry flip the pancake over and cook for about 1-2 minutes until golden brown. Repeat this step until all the batter has been cooked.


Vegan Buttermilk (Make this first)


Ingredients


1 cup Nut Milk


1 tsp Apple Cider Vinegar


Instructions


Mix all the ingredients together in a glass cup or bowl and allow to sit and coagulate for about 5 minutes.


Easy Blueberry Syrup


Ingredients


2 cups Frozen Blueberries


1 cup Agave Nectar (or sweetener of choice)


Instructions


Place all the ingredients in a sauce pan and cook on medium heat until most of the blueberries break open a bit for 20 minutes. Remove from heat and allow to cool for about 10 minutes. Using an immerging blender or food processer mix until smooth. Place in an air tight container until use.


Note: The blueberry syrup will thicken up after it cools.
