Vegan Mushroom Stroganoff


Creamy delicious and full of flavor, this Mushroom Stroganoff will have you licking the plate, or is that just me, LOL. I know you'll love this dish just like me and my family does, and you will not miss the beef.


Ingredients:

1 pound mushrooms, sliced

1/2 cup diced onion

2 cloves garlic, minced

2 tbsp vegan butter

1 tbsp all-purpose flour

1 cup vegetable broth

1/4 cup vegan sour cream

1 tbsp chopped parsley

Salt and pepper to taste


Instructions:

In a pan, sauté the mushrooms, onion, and garlic in vegan butter until the mushrooms are tender.


Sprinkle the flour over the mushrooms and stir to combine.


Slowly pour in the vegetable broth, stirring constantly, until the mixture thickens.

Reduce heat and stir in the vegan sour cream, parsley, salt, and pepper.


Serve over your choice of pasta or rice.
