Vegan Mozzarella Cheese

This vegan mozzarella cheese offers a creamy, melty texture perfect for pizzas, pastas, and sandwiches, made from wholesome plant-based ingredients. It's rich in healthy fats and antioxidants from cashews, while tapioca starch provides a stretchy consistency without any dairy. Ingredients

1 cup Raw Cashews (soaked in hot water for at least 15 minutes, then drained)

1 cup Water

2 Tablespoons Tapioca Starch

1 Tablespoon Nutritional Yeast

1 Tablespoon Lemon Juice

1 tsp Apple Cider Vinegar

1 tsp Salt (adjust to taste)

1/2 tsp Garlic Powder (optional)

1/2 tsp Onion Powder (optional)

1 tsp Agar Agar Powder (optional, read note below)



Instructions

Soak the raw cashews in hot water for at least 15 minutes, then drain and rinse them.


In a blender, combine the soaked cashews, water, tapioca starch, nutritional yeast, lemon juice, apple cider vinegar, salt, garlic powder, and onion powder. Blend until completely smooth. This might take a few minutes, and you may need to scrape down the sides of the blender a couple of times to ensure everything is well mixed.


Pour the blended mixture into a medium-sized saucepan. Cook over medium heat, stirring constantly.


As the mixture heats up, it will begin to thicken. Continue stirring until it becomes stretchy and has a gooey, mozzarella-like consistency. This should take about 5-10 minutes.


Once thickened, remove the saucepan from the heat. You can use the cheese immediately while it’s warm and gooey, or let it cool. It will firm up a bit more as it cools.


Store any leftover vegan mozzarella in an airtight container in the refrigerator for up to 5 days. It will firm up more when refrigerated, so you may need to reheat it to regain its gooey texture.


Tips:

For a Firmer Cheese: If you want a firmer cheese that you can slice, you can add a teaspoon of agar powder to the mixture before cooking.


For Melting: This vegan mozzarella works well for melting on pizzas or in grilled cheese sandwiches. Simply spread it on and heat as desired.


Use a heat proof rubber spatular to make it easier to stir while thickening.
