These Vegan Sloppy Joes are so yummy! It's a healthy source of protein, fiber, and potassium that you and your family can enjoy.
Ingredients:
1 cup cooked brown lentils
1/2 cup diced onion
1/2 cup diced green bell pepper
1/2 cup tomato sauce
1 tbsp tomato paste
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp smoked paprika
Salt and pepper to taste
Instructions:
In a pan, sauté the onion, green bell pepper, and garlic until tender.
Add the cooked lentils, tomato sauce, tomato paste, apple cider vinegar, maple syrup, smoked paprika, salt, and pepper. Stir to combine.
Simmer for 5-10 minutes or until heated through.
Serve on your choice of buns or bread.
