Ingredients
filling:
4 med or 3 large fresh whole jalapeños
4 oz. vegan cream cream
1/2 cup vegan cheddar cheese
1 Tablespoon of nutritional yeast
1 tsp garlic powder
1/2 tsp onion powder
pinch salt
Topping:
1/4 cup panko bread crumbs
1 Tablespoon of Butter (melted)
Instructions
Preheat the oven to 350 F (190 C) and line a baking sheet with parchment paper, set aside.
Slice each jalapeño diagonally in half and scrape out the insides and seeds.
Add to a medium bowl all the remaining jalapeño filling ingredients and stir until well combined. Put even amounts of filling inside each of the jalapeños and place them on the prepared baking sheet. Bake for 18-20 minutes.
While stuffed jalapeños are cooking add the melted butter and panko bread crumbs to a pan and toast until golden brown.
After the jalapeños are done baking top with the toasted panko bread crumbs.
Allow to cool slightly then serve.
