Vegan Jackfruit Drumsticks

Savor the savory goodness of vegan jackfruit drumsticks, a delectable meat substitute that rivals the taste of chicken. These plant-based delights boast a mouthwatering flavor and tender texture, proving that cruelty-free dining can be just as delicious as its meaty counterpart.


Ingredients

6 Rice Papers (round)

3-4 Cinnamon Sticks (cut each in half)

2 cups of Jackfruit (shredded apart)

1 can Chickpeas (drained and rinsed)

1 Tablespoon Nutritional Yeast

1 Tablespoon Cornstarch

1 tsp Onion Powder

1/2 tsp Garlic Powder

1/4 tsp Salt

2 tsp Vegetable Bouillon Powder

1 Tablespoon Coconut Oil

1 Tablespoon Vegan Butter (melted)


Rub

1/4 cup Brown Sugar

1 Tablespoon Paprika

1 tsp Onion Powder

1 tsp Garlic Powder

1/2 tsp Black Pepper

1/2 tsp Salt


Instructions

Preheat oven to 365 F degrees (180 C). Line a baking sheet with parchment paper and evenly spread 1-2 tablespoons of oil on the parchment paper, set aside.


In a small bowl mix together the rub ingredients, set aside.


In a food processor pulse the chickpeas into a rough chop, but do not make it mushy, just make into crumbles.


In a large bowl add the chickpeas, shredded jackfruit, nutritional yeast, cornstarch, onion powder, garlic powder, salt and vegetable bouillon and mix just until combined (not mushy). Separate this mixture into 6-8 even sizes mounds (6 mounds for bigger drumsticks or 8 mounds for regular size drumsticks).


Fill a large bowl, about the size of the rice papers, with water. Take a rice paper and submerge it in the water for 8 seconds then place the rice paper onto a flat surface.

Place a mound of the jackfruit filling onto the rice paper horizontally. Push one of the cinnamon sticks halfway into the filling on the right side and form the filling around it to resemble a drumstick.

Fold the right and left side of the rice paper over the filling then roll the rice paper around the filling and cinnamon stick until it's wrapped around it completely. At this point it should look like a drumstick. Place the drumstick onto the prepared baking sheet and repeat this process.


Base the tops and sides of the drumsticks with the melted butter and the rub seasoning.


Bake for 25 minutes, remove from the oven and turn each drumstick over onto the other side. Base this side with butter and the rub as well. Return the drumsticks back into the oven and bake for another 25 minutes until crispy and brown.


Note: You can leave the drumsticks in the oven for an additional 10 minutes for a dryer meat texture.
