Vegan Italian Sausage

Ingredients

Dry Ingredients

1 cup Vital Wheat Gluten

2 Tablespoons Chickpea Flour

2 Tablespoons Nutritional Yeast

1 tsp Fennel Seeds (crushed)

1 tsp Smoked Paprika

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Dried Oregano

1/4 tsp Crushed Red Pepper Flakes (optional, more for spicer)

1/2 tsp Salt

1/4 tsp Black Pepper

1/4 tsp Liquid Smoke (optional for a smoky link flavor)


Wet Ingredients

3/4 cup Vegetable Broth

1 Tablespoon Soy Sauce or Tamari

1 Tablespoon Tomato Paste

1 Tablespoon Olive Oil


Instructions

Combine dry ingredients in a large bowl and whisk together.


Mix wet ingredients in a separate bowl.


Add wet ingredients to dry and mix until a dough forms.

Knead for 2-3 minutes until firm.


Divide into 4 even pieces and shape each into a sausage link about 5 inches long.

Wrap each link tightly in aluminum foil or parchment paper.


Steam for 30-35 minutes until firm. Let cool before unwrapping.


Grill, pan-fry, or bake as desired.



Tip: If you don't have a steamer you can always use a rice cooker with the basket in it and water at the bottom to create steam.
