Vegan Feta Cheese

This vegan feta cheese made from tofu is a delicious nut free, dairy-free alternative, perfect for salads, sandwiches, and more. Packed with protein and fortified with nutritional yeast, it provides a boost of essential vitamins like B12. The blend of tangy lemon juice and apple cider vinegar adds a delightful zing, while garlic and oregano deliver flavorful depth. With just a fraction of the calories and fat found in traditional feta, it's a guilt-free option that complements any meal.


Ingredients

1 Block (14 oz) Firm Tofu, drained, pressed and cut into cubes

3 Tablespoons Nutritional Yeast

3 Tablespoons Lemon Juice

2 Tablespoons Olive Oil

1 tsp Apple Cider Vinegar

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Dried Oregano

Salt, to taste

Fresh Herbs (optional, like Basil or Dill)


Instructions

Place the cubed tofu into a mixing bowl.


In a separate bowl, whisk together the nutritional yeast, lemon juice, olive oil, apple cider vinegar, garlic powder, onion powder, dried oregano, and salt.


Combine the marinade with the tofu and gently mix until the tofu is well-coated.


Cover and let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld. For best results, marinate for a few hours or overnight.


Use your vegan feta in salads, pasta dishes, or as a topping for sandwiches. Add fresh herbs for extra flavor if desired.
