Ingredients
2 cups of Pitted Dates (Medjool Dates are ideal)
1 cup of Water (plus more if needed)
1 tsp of Vanilla Extract (optional)
A pinch of Salt (optional)
Instructions
If your dates are not very soft, soak them in warm water for about 10-15 minutes to soften them up. Drain well before using.
Add the pitted dates to a high-speed blender or food processor.
Add 1 cup of water to the blender or food processor.
Blend the dates and water until you achieve a smooth, thick paste. This may take a few minutes, and you may need to stop and scrape down the sides of the blender or processor occasionally.
If the paste is too thick, add more water, a tablespoon at a time, until you reach the desired consistency. It should be spreadable and smooth.
If using, add the vanilla extract and a pinch of salt. Blend again until well incorporated.
Transfer the date paste to an airtight container. It can be stored in the refrigerator for up to 2 weeks.
Tips:
For an even richer flavor, you can use coconut water instead of regular water.
If you prefer a sweeter paste, add a few more dates.
