Vegan Condensed Milk

Ingredients

1 can of full-fat coconut milk (400 ml, 13.5 fl oz.)

1/2 cup of granulated sugar

1 teaspoon of vanilla extract


Instructions

In a saucepan, combine the coconut milk and sugar over medium heat. Stir well until the sugar has completely dissolved.


Once the mixture starts to simmer, reduce the heat to low to maintain a gentle simmer.

Let the mixture simmer gently, stirring occasionally, for about 40-60 minutes, or until it has reduced by half and thickened to a condensed milk consistency. Be patient; this process takes some time. Time could extend to an additional 30 minutes.


Once the mixture has thickened, remove it from the heat and stir in the vanilla extract.

Let the condensed milk cool completely before transferring it to a jar or airtight container for storage. It will continue to thicken as it cools.


Store the vegan condensed milk in the refrigerator for up to 1-2 weeks.
