Vegan Chocolate Ganache Cupcakes

Delicious vegan chocolate cupcakes

Satisfy your chocolate cravings with these irresistible Vegan Chocolate Ganache Cupcakes. Dive into this rich, decadent treats made with plant-based ingredients. Even the toughest sceptic will say they are amazing!



Ingredients

1-1/2 cups All Purpose Flour

1 cup granulated Sugar

1/3 cup Cacao Powder or Coco Powder

1 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Salt

1 cup unsweetened Plant Based Milk (I used unsweetened Almond)

1/2 cup Coconut Oil (melted)

1 tsp Vanilla Extract



Instructions:

Preheat the oven to 350°F (175°C).

In a large bowl, combine all the cupcake ingredients and mix until smooth.


Pour the batter 2/3 full into each lined muffin cup. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.


Remove from oven and allow to cool completely in pan. Allow to cool completely before frosting.


Chocolate Ganache

Ingredients:

1 cup Vegan Chocolate Chips

1 cup canned Coconut Milk


Instructions:

Put the chocolate chips in a medium bowl, set aside. Heat the coconut milk in a small pot until very hot but not boiling. Pour the hot milk over the chocolate chips that are in the bowl. Allow to sit for 3-5 minutes allowing the chocolate to melt. Whisk the chocolate and coconut milk together until it forms a creamy ganache.


Note: If you want a lighter whipped chocolate ganache frosting you can use a hand mixer to whip the ganache adding air into the mixture making it light and fluffy.


Makes about 6-8 Cupcakes
