Who doesnt love a good hot gooey Chocolate Chip Cookie right from the oven. Serve these with a glass of your favorite plant based milk and you'll be in cookie heaven.
Ingredients:
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup vegan butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1 cup vegan chocolate chips
Instructions:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
In another mixing bowl, cream together the softened vegan butter, granulated sugar, and brown sugar until light and fluffy.
Add the unsweetened applesauce and vanilla extract to the mixing bowl and mix until well combined.
Gradually add the dry ingredients to the wet mixture and mix until the dough forms.
Stir in the vegan chocolate chips.
Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing the cookies about 2 inches apart.
Bake for 10-12 minutes or until the edges are golden brown and the centers are set.
Remove from the oven and let the cookies cool for a few minutes before transferring to a wire rack to cool completely.
This recipe was easy and the cookies are delicious 😋 and so soft. I made them today even though my cookie form isn’t perfect.
