Yummy Vegan Cherry Scones are perfect with your morning beverage, as a noon time snack or delicious after dinner dessert. Pop them in your lunch box and take them to work or school as they are a great portable treat.
Ingredients
2 cups Organic Unbleached Flour
1/4 cup Monk Fruit Sweetener
1/4 tsp Cinnamon
1/2 cup Walnuts (chopped)
1 tsp Baking Powder
1/4 tsp Baking Soda
Zest of 1/2 a Lemon
1/4 tsp Salt
1/4 cup Raw Organic Honey (or Agave Nectar if your vegan)
1/4 cup Organic Coconut Oil (room temp)
1 tsp Vanilla Extract
1/4 cup Vegan Cream Cheese
1/4 cup Nut Milk of choice
1 cup Frozen Organic Cherries (unthawed)
Maple Glaze
2 cup Powdered Sugar
2-4 Maple Syrup
In a medium bowl mix together the sugar and maple syrup until smooth. Adjust the powdered sugar as needed to make the glaze the consistency you desire. Use for dipping scones.
Instructions
Preheat oven to 350 degrees and line a large baking sheet with parchment paper, set aside.
In a large bowl with a fork mix together the flour, monk fruit sweetener, cinnamon, walnuts, baking powder, baking soda, salt and lemon zest. Using the fork cut in the coconut oil and cream cheese until the flour has small clumps. This will ensure the dough will be moist and tender.
Stir in the honey and vanilla extract, then add a tablespoon at a time the nut milk until it resembles a soft but NOT wet dough. ( I used 2 Tablespoons)
Drain all excess liquid from the cherries and pat with a paper towel, then cut each cherry into 4 pieces. Fold the cherries into the dough, but do not over mix as this will cause your scones to be heavy and tough.
Using a ice cream scoop form 8 mounds with the dough onto the prepared baking sheet. Shape round and press the dough down a bit.
Bake 25-30 minutes until golden brown. Remove from the oven and place on a cooling rack to cool. Dip each scone into the Maple Glaze, place back onto the cooling rack to set. Enjoy!

2 cup Powdered Sugar
2-4 Maple Syrup

Note: I buy Costco Organic Frozen Cherries as they taste delicious and are available all year round. You can also replace the honey with agave nectar or brown rice syrup if you are vegan, however it may not be as sweet of a scone. Be sure to adjust sweeteners as needed.
