Vegan Cheese Grits

These creamy vegan cheese grits are the ultimate comfort food, blending the rich flavors of plant-based cheddar, buttery goodness, and a touch of garlic. Perfectly smooth and satisfying, they're ideal as a hearty side dish or a cozy main meal when paired with your favorite veggies or proteins. Packed with plant-powered nutrients, this dish offers indulgence without compromise!




Ingredients

1 cup Quick-Cooking Grits (or stone-ground for a creamier texture, cook time adjusted)

4 cups Unsweetened Plant Milk (like almond, oat, or cashew) or a mix of plant milk and water

1 tsp Salt (adjust to taste)

1/2 tsp Garlic Powder

1/4 tsp Smoked Paprika (optional, for flavor depth)

1/2 cup Vegan Cheddar Cheese (shredded)

2 Tablespoons Nutritional Yeast (optional, for extra cheesiness)

2 Tablespoons Vegan Butter

Black Pepper, to taste

Chopped Fresh Parsley or Green Onions for garnish (optional)


Instructions

In a medium saucepan, bring the plant milk (or milk and water mixture) to a gentle boil over medium heat.


Stir in the salt, garlic powder, and the optional smoked paprika if using.


Slowly whisk in the grits, ensuring no lumps form.

Lower the heat to medium-low and simmer, stirring frequently, until the grits thicken (about 5-10 minutes for quick-cooking grits; 20-25 minutes for stone-ground).


Once the grits are creamy, stir in the vegan cheese and nutritional yeast.

Add the vegan butter and mix well until melted and incorporated.


Adjust salt and pepper to your preference.


Spoon the grits into bowls and garnish with fresh parsley or green onions if desired.
