Vegan Breakfast Sausage

Our mouthwatering Vegan Breakfast Sausages are packed with flavorful ingredients, perfect for a healthy start to your day!




Ingredients

1 cup TVP (textured vegetable protein)

1 cup Vegetable Broth

2 Tablespoons Soy Sauce or Tamari

1 tsp Maple Syrup

1 tsp Tomato Paste

1/2 cup Quick Oats

1/4 cup All Purpose Flour or All Purpose Gluten Free Flour

1 tsp Paprika

1 tsp Fennel

1/2 tsp each Onion and Garlic Powder

1/2 tsp ground Cumin

1/4 tsp Salt

1/4 tsp Black Pepper

1/4 tsp ground Sage (optional)

1/4 tsp Red Pepper Flakes (optional)

Oil for frying


Instructions

Place the vegetable broth and TVP in a small pot on the stovetop on medium heat. Cook until the liquid is completely absorbed.


Mix in a food processor the oats until they are almost flour like. Add the spices and flour, pulse a few times then add the TVP and the remaining ingredients to the processor. Pulse a few times until combined only. Do not over process as you want to keep the meat-like texture. Pour the mixture into a bowl for easier handling. Make 5 large sausages or 10 mini sausages and place them on a plate.


Add about 2 tablespoons of oil to a frying pan then place the sausages in the pan. Fry on medium heat on each side for about 3-4 minutes or until the sausage has browned on both sides and cooked through.


Note: for a spicy sausage add 1-2 tsp of red pepper flakes to the sausage mixture.

Note: for a more fatty sausage feel and flavor after you flip the sausage in the pan brush each with additional oil.
