Vegan Breakfast Burrito


Burritos are so versatile as you can add beans, meat, tofu, chicken, veggies, the list goes on and on. This is a simple version of a vegan burrito but I encourage you to make this recipe your own and add your favorite ingredients to it.


Ingredients:

1/2 block of firm tofu, crumbled

1/2 red bell pepper, diced

1/2 small yellow onion, diced

1 garlic clove, minced

1 tsp turmeric

1 tsp cumin

Salt and pepper to taste

2 whole wheat tortillas

1/2 cup salsa

Optional toppings: sliced avocado, hot sauce, chopped cilantro, etc.


Instructions:

In a skillet, sauté the bell pepper, onion, and garlic over medium heat until softened.

Add the crumbled tofu, turmeric, cumin, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.


Heat the tortillas in the microwave or on a skillet.

Spoon the tofu scramble onto the tortillas, top with salsa and any other desired toppings.

Roll up the tortillas and serve.
