Blueberries are an excellent superfood with lots of healing properties. So any chance I get I like to add them to a recipe. These quick and easy blueberry bars are a yummy treat for you and your family. Plus they are a treat you can take on the go.
Ingredients:
1 1/2 cups rolled oats
1/2 cup whole wheat flour
1/2 tsp baking powder
1/4 tsp salt
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1 cup blueberries
Instructions:
Preheat the oven to 375°F (190°C) and grease an 8-inch square baking dish with coconut oil.
In a mixing bowl, combine the rolled oats, whole wheat flour, baking powder, and salt.
In another mixing bowl, whisk together the melted coconut oil, maple syrup, unsweetened applesauce, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until well combined.
Fold in the blueberries.
Press the mixture into the prepared baking dish.
Bake for 30-35 minutes or until the top is golden brown and the edges are firm.
Remove from the oven and let it cool before slicing and serving.
