Vegan Birthday Cake

Happy Birthday to you Happy Birthday to you Happy Birthday beautiful soul, Happy Birthday to you!!! If it's your birthday and you think you will miss out on a delicious moist birthday cake well I got you covered my friend! Just because you are vegan or plant based doesn't mean you have to skip out on a tasty celebration cake. Enjoy!


Ingredients

3 cups All Purpose Flour

2 cups granulated Sugar

3 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp Salt

2 tsp Vanilla Extract

2/3 cup Vegetable Oil or Coconut Oil melted

2 cups Plant Based Milk

1/2 cup Vegan Sprinkles plus additional to decorate (optional)

1 Batch of Vegan Vanilla Frosting (recipe below)


Instructions

Preheat oven to 350 F degrees (180 C) and line the bottom of two 8 inch cake pans with parchment paper, set aside.


Mix all the dry ingredients together in a large bowl. Add the vanilla extract, oil and plant based milk stir until well combined. If you are using the sprinkles fold them into the batter now.


Pour the batter into the prepared cake pans dividing evenly amongst both. Bake for 35-40 minutes until a toothpick comes out clean when poked in the center of the cakes.


Allow the cakes to cook in the pan for 20 minutes, then cool on a cooling rack until completely cooled.


Three Frosting Options:

Vegan Vanilla Frosting

Ingredients For The Base:

3 cups Powdered Sugar

1/2 cup Vegan Butter (softened)

1 tsp Vanilla Extract

1-2 Tablespoons Plant Based Milk


Instructions

Using a hand mixer beat all the above ingredients together until creamy and smooth.


For Chocolate Frosting:

Add to the base above 1/2 cup Cocoa Powder and whisk until smooth. You can add additional plant based milk to get to the consistency you desire.


For Cream Cheese Frosting:

Add to the base 8 oz. Vegan Cream Cheese (softened) beat until fluffy and smooth.


Note: If you make this recipe without the sprinkles it will be a delicious moist butter type cake.

Note: Brown, Coconut or any sugar substitute can be used for this recipe. The texture may be slightly different.

Note: You can also use a 9x12 rectangular pan but the cooking times will vary.

Note: I used the softer type of Sprinkles for this recipes not the hard candy type.
