Banana Bread is one of my favorites! I remember getting off the bus each morning in Buffalo right before heading to my college class. There was a lady always selling mini loaves at the station. They were so good and smells delightful! That's when I got hooked on the banana bread!
Ingredients:
2 ripe bananas
1/3 cup coconut sugar
1/4 cup melted coconut oil
1 tsp vanilla extract
1 1/2 cups whole wheat flour
1 tsp baking soda
1/4 tsp salt
1/4 cup almond milk
Instructions:
Preheat the oven to 350°F (180°C) and grease a loaf pan with coconut oil.
In a mixing bowl, mash the bananas until they are almost smooth.
Add the coconut sugar, melted coconut oil, and vanilla extract to the bowl and mix well.
In a separate bowl, mix the whole wheat flour, baking soda, and salt.
Add the dry ingredients to the banana mixture and stir until well combined.
Add the almond milk and stir until the batter is smooth.
Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool before slicing and serving.
