As a child I loved DeMet's Turtles candy! I especially got a kick out of the commercial from the 80's with dancing people dressed in tuxedo turtle costumes and a classy lady singing that fancy tune. These candies are named this because when you pile the chocolate and caramel on top of the pecans, it kind of looks like the shell of a little turtle. I wanted to remake this delicious indulgent treat, but sugar free and keto friendly to enjoy a guilt free treat.
Ingredients
One 7 ounce bag of Lily's Milk Chocolate Chips (or your favorite sugar free or vegan chocolate)
12 Werther's Sugar Free Chewy Caramels
1 cup Pecans (toasted and broken into pieces)
1/2 tablespoon Coconut Oil
Instructions
Line a large baking sheet with a piece of parchment paper. Using a pen or pencil draw 12 circle onto the parchment paper about 2-1/2 inches in size, set aside. This will help guide you in forming a proper candy.
In a microwave safe bowl melt the chocolate chips and coconut oil in 30 seconds increments until fully melted, stirring in between the heating times. Make a mound with a 1/2 tablespoon of chocolate inside each circled section on the parchment paper.
Remove the wrappers from the 12 caramels and slightly flatten and form each into a shape that somewhat resembling a turtle shell. Set aside until used in the following steps.
Place 1/2 tablespoon of the toasted chopped pecans onto each mound of chocolate. Top each pecan mound with the formed caramels then with 1 tablespoon of chocolate, or more if needed.
Place the candy in the refrigerator for about 30 minutes or until the chocolate is firm. Remove from the baking sheet and enjoy.
