Try this an upscaled Avocado Toast filled with protein power! This is a true favorite among Vegans, Vegetarians and anyone who loves a hearty delicious toast for breakfast.
Ingredients
1/2 Block of Firm Tofu, crumbled
1/2 Red Bell Pepper, diced
1/2 small Yellow Onion, diced
1 Garlic clove, minced
1 tsp Turmeric
1 tsp Cumin
Salt and Pepper to taste
2 slices Whole Grain Bread, toasted
1/2 Avocado, sliced
Optional: Hot Sauce for serving
Instructions
In a skillet, sauté the bell pepper, onion, and garlic over medium heat until softened.
Add the crumbled tofu, turmeric, cumin, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
Serve the tofu scramble on top of the toast and avocado. Add hot sauce, if desired.
