This is the BEST VEGAN PEANUT BUTTER COOKIES I have ever made! These are a dream come true for any peanut butter lover! They’re perfectly soft in the center with delightfully crisp edges, bursting with rich, nutty flavor in every bite. You’d never guess they’re completely plant-based, making them a great treat for everyone to enjoy. Whether paired with a glass of plant-based milk or enjoyed on their own, these cookies are irresistibly delicious and comforting. Bonus: they’re easy to whip up in no time!
Ingredients
1 cup Unsweetened Creamy Natural Peanut Butter
1/2 cup Vegan Butter, softened
1/2 cup Granulated Sugar
1/2 cup Brown Sugar, packed
1/4 cup Plant-Based Milk (like almond or oat milk)
1 tsp Vanilla Extract
1-1/2 cups All-Purpose Flour
1 tsp Baking Soda
1/4 tsp Salt
Optional: 1/2 cup Vegan Chocolate Chips or Chopped Peanuts (for extra texture!)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the peanut butter, vegan butter, granulated sugar, and brown sugar. Use a large wooden spoon or electric mixer until smooth and creamy. Add the plant-based milk and vanilla extract, and mix again.
Mix in the flour, baking soda, and salt. Gently fold the dry ingredients into the wet mixture using a spatula. The dough should be thick and pliable. If using chocolate chips or peanuts, fold them in now.
Scoop out 1-2 tablespoons of dough and roll into balls. Place them on the prepared baking sheet, leaving about 2 inches between each cookie. Use a fork to press a crisscross pattern on the top of each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden. The centers will still be soft but will firm up as they cool.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy with a glass of plant-based milk!
Tip: for a crispier cookie press the dough flatter when making your crisscross. After cookies have cooled completely you can also melt Milk or Semi-Sweet Chocolate Chips and dip one half of the cookies into the melted chocolate for more decoration and flavor. You can also drizzle stripes onto the cookies to decorate as well.
