Savor the delightful fusion of flavors in these vegan sweet potato waffles and pecan crunch topping, effortlessly combining a golden, crisp exterior with a luscious sweet potato base. Topped with a heavenly pecan crunch, these easy-to-make waffles are a guilt-free, delicious twist on a classic breakfast favorite.
Ingredients
2 cups All Purpose Flour or All Purpose Gluten Free Flour
1/4 cup Brown Sugar (packed)
1-1/2 tsp Baking Powder
1/2 tsp Salt
1 tsp ground Cinnamon
1/4 tsp Nutmeg
2 Flax Eggs (1/4 cup Flaxseed Meal + 6 Tablespoons Water)
1 cup Plant Based Milk (I used unsweetened Almond Milk)
1 cup Sweet Potatoes (roasted)
1/4 cup Butter (melted, not hot)
Cooking Spray for waffle Iron or Oil
Pecan Crunch: (make this first)
Ingredients
1 cup Pecan Halves
1/4 cup real Maple Syrup
Big pinch of Salt
Instructions
Line a baking sheet with parchment paper.
Place a frying pan onto the stovetop and turn the burner on medium heat. Add to the pan the pecans and maple syrup and stir to combine.
Cook the pecans for about 6-8 minutes until the syrup has evaporated and is sticking to the pecans. Pour the pecans onto the prepared baking sheet then sprinkle with salt.
Allow the pecans to cool completely then chop into pieces with a knife. Set aside.
Waffle Instructions
In a small cup mix the flax eggs ingredients together and set aside.
In a large bowl whisk together the all purpose flour, brown sugar, baking powder, salt, cinnamon and nutmeg.
In a food processor add the flax eggs, plant based milk, mashed sweet potato and butter mix until smooth. Add to the bowl with the flour and mix together until just combined.
Heat a waffle iron and cook the waffles according to the manufactures instructions. Plate and top with the pecan crunch and real maple syrup.
Note: I used a 1/3 cup measuring cup to scoop the thick waffle batter into the waffle iron. It made 8-9 waffles.
If you don't have a food processor mash the sweet potatoes with a fork until smooth then add to the bowl with the remaining ingredients.
You can make these waffle, place them in a ziplock bag and freeze them as well.
