Sugar Free Gingerbread Cookies

I LOVE COOKIES!!! I mean, I really enjoy partaking in an occasional crunchy cookie, LOL. That's why I love the holidays because cookies are one of the essentials in our home. These Gingerbread Cookies are crunchy, tasty and perfectly sweetened. The recipe can be use to make gingerbread houses as I do with my grandkids. Plus I feel good giving them a healthy treat that's gluten and sugar free.


Ingredients


3 cups Almond Flour


1/2 cup Coconut Flour


2 tsp Baking Powder


2/3 cup Brown Sugar Substitute


2 tablespoons Rosa's Spice Mix (recipe below)


1 tsp ground Cinnamon


Pinch of Salt


1 large Egg


1/4 cup Butter (softened)


1 tablespoon Vanilla Extract


Rosa's Spice Cookie Mix


1/4 cup ground Cinnamon


1/4 cup ground Ginger


2 tsp ground Clove


2 tsp ground Nutmeg


2 tsp ground Black Pepper


Instructions


In a bowl mix all the spice ingredients together until well combined. Store in an airtight container.

In a large bowl using a electric hand mixer blend together all the cookie ingredients until you get a dough like consistency. Wrap the dough with plastic wrap and place in the fridge to set up for 1 hour.


Preheat the oven to 350 degrees and line a baking sheet with parchment paper, set aside.


Remove the dough from the fridge. Place a piece of parchment paper on the kitchen counter and dust with almond flour. Put the dough on the paper and cover with an additional piece of parchment paper. Roll the dough to about 1/4 inch thick (or thickness of choice, the thinner the cookie the crunchier).


Using a cookie cutter, cut out gingerbread people shapes and place on the prepared baking sheet. Bake for 10-12 minutes until golden brown. Remove the cookies from the oven and allow the cookies to cool completely, enjoy.

Note: Using the brown sugar substitute will give you a deeper molasses flavor and the plain Monk Fruit Sweetener will give a tasty simplistic flavor and crunch. Both are delicious!




You can add 1 tablespoon of Molasses in the batter for a more authentic flavor as well.
