Ingredients
2 cups Rolled Oats (can use gluten free)
1 cup All Purpose Flour (can use gluten free)
1/2 cup Vegan Butter
1/4 cup granulated Sugar
1/2 tsp Baking Soda
1 tsp Vanilla Extract
1/4 tsp Salt
1 cup Strawberry Jam
Instructions
Preheat oven to 350 F degrees (175 C) and line a 8x8 baking pan with parchment paper, set aside.
In a food process pulse the oats, flour, vegan butter, sugar, baking soda, vanilla and salt together until it resembles a crumb (DO NOT OVER MIX).
Press 2/3 of the crumb mixture into the prepared baking pan to form a crust. Evenly spread the strawberry jam onto the crust. Top the strawberry jam with the remaining crumble mixture.
Bake for 25-30 minutes or until set and golden brown. Allow to cool completely before cutting into squares and serving.
Note: If you do not have a food processor you can make the crumble mixture by hand.
