Strawberries and Lemon Cream

Strawberries are so refreshing and a perfect snack or after dinner dessert. These tasty treats is lemony and perfectly sweetened with a fantastic strawberry burst in your mouth! Ingredients 1 pint Strawberries (about 15 pieces) 8 ounces Cream Cheese room temperature 3 tablespoons Powdered Monk Fruit Sweetener 1-1/2 tablespoons Lemon Juice 1/2 tsp Lemon Zest 1/2 tsp Lemon Extract 4-6 drops Liquid Monk Fruit Sweetener or Liquid Stevia Instructions Prepare your strawberries by washing and cutting off the leafy tops and a bit of the bottom of the strawberry so they can stand upright and put each on a plate. Core out the center with a 1/2 teaspoon measuring spoon. With a electric hand mixer in a large bowl blend together the remaining ingredients until fluffy. Place the lemon cream filling in a plastic zip lock bag pushing the mixture towards the corner of the bag to the tip. Cut about a half inch tip off of the bag. Pipe the filling into each of the strawberries filling each one evenly. Place the strawberries in the refrigerator for about an hour or until the filling firms up. Enjoy!
