Starbucks Pumpkin Spice Latte (Vegan CopyCat)

Experience the warmth of autumn with this homemade Starbucks Pumpkin Spice Latte Vegan CopyCat! This comforting beverage blends rich espresso with creamy milk, pumpkin puree, and a perfect mix of warm spices for that iconic fall flavor. Topped with whipped cream and a sprinkle of pumpkin pie spice, it’s a delightful way to savor the season. Enjoy this cozy treat at home, whether as a morning boost or an afternoon indulgence!




Ingredients

2 cups Non-Dairy Milk (such as Oat, Almond, or Soy)

2 Tablespoons Pumpkin Puree

1/4 cup Maple Syrup or Agave syrup (or sweeten to taste)

1/2 tsp Pumpkin Pie Spice (or a mix of cinnamon, nutmeg, ginger, and cloves)

1/2 tsp Vanilla Extract

1/2 cup Strong Brewed Coffee or 1-2 shots of Espresso

Coconut Whipped Cream (optional)

Extra Pumpkin Pie Spice for topping


Instructions

In a small saucepan, whisk together the non-dairy milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract.


Heat the mixture over medium heat, stirring occasionally, until it’s hot but not boiling.


Use a frother or whisk to froth the mixture until it becomes frothy.


Pour the brewed coffee or espresso into a mug, and then pour the pumpkin milk mixture over the coffee.


Top with coconut whipped cream and a sprinkle of pumpkin spice.


Tip: I prefer using Oatmilk or Cashew milk for a more creamy flavor for this latte
