Southwest Baked Chicken


This Southwest Chicken is a perfect Easy One Pan recipe. I like making it on the days when I really don't feel like cooking. Place all the ingredients on a sheet pan and pop it in the oven, that's it! The dish is full of such rich smoky flavors it's definitely a winner winner chicken dinner!


Ingredients


9 pieces Raw Chicken Legs (or chicken pieces of choice)


3 tablespoon Taco Seasoning


1/4 cup Extra Virgin Olive Oil


2 large Red Bell Peppers (sliced into strips)


3/4 cup Salsa


Instructions


Preheat oven to 375 degrees. Evenly pour the salsa on a large baking sheet and set aside.


Place the chicken, red peppers, taco seasoning and olive oil in a large bowl. Toss together until everything is completely coated. Lay the chicken mixture on top of the salsa on the baking sheet.


Bake for 40-50 minutes until chicken turns golden brown and cooked through.


Remove the baking sheet from the oven and place the chicken and peppers on a large platter. Be sure to scoop up the delicious sauce from the pan and pour it over the chicken and serve.

Note: You can use any type of chicken pieces for this recipe, thighs, breast, etc. the macros will vary.
