Soft Batch Molasses Cookies


Soft Molasses Cookies are another tasty traditional cookie that my family enjoyed during the holiday season. This one is altered to reduce the molasses and replace the flour with keto friendly flours. It's a healthier version of my Molasses Cookies and at 2.5 Carbs per cookie its a great option. Ingredients 1-1/2 cups Almond Flour 1/4 cup Coconut Flour 1/3 cup Monk Fruit Sweetener 1 tsp Baking Powder 1 tablespoon Rosa's Spice Cookie Mix (recipe below) 1/2 tsp Cinnamon Pinch of Salt 3 large Eggs 1/4 cup Butter (melted) 1/2 tablespoon Vanilla Extract 2 tablespoons Molasses

Instructions Preheat oven to 350 degrees and line 2 baking sheets with parchment paper, set aside. In a large bowl using a electric hand mixer combine all the cookie ingredients together until you get a dough like consistency, mixing for about 2 minutes. With a cookie scoop or large spoon, make 12 mounds of cookie dough on each baking sheet and flatten the dough to about 1/2 inch thick. Bake for 10-12 minutes until golden brown. Remove from the oven and allow to cool, enjoy. Rosa's Spice Cookie Mix 1/4 cup ground Cinnamon 1/4 cup ground Ginger 2 tsp ground Clove 2 tsp ground Nutmeg 2 tsp ground Black Pepper Instructions In a bowl mix all the spice ingredients together until well combined. Store in an airtight container. Calories 82, Fat 6.6 g, Carbs 3.9 g, Fiber 1.4 g, Protein 2.7 g, Net Carbs 2.5 g (per 1 cookie) Makes 22 Cookies

Note: These cookies may have molasses in them and not totally keto, however they are only 2.5 Net Carbs per cookie and can be a great choice for a carb up day or indulgence with less sugar.
