These Snickers-inspired energy balls are sweet, chewy, and packed with that nostalgic chocolate-peanut-caramel flavor—but made with whole food ingredients you can feel good about. Medjool dates provide a natural caramel-like sweetness, paired with crunchy peanuts, rich cacao, and creamy nut butter. They’re the perfect midday pick-me-up or post-dinner treat that satisfies your sweet tooth and keeps you energized.
Ingredients
1 cup Peanuts (unsalted, roasted or raw – chopped a bit if whole)
1 cup Soft Medjool Dates, pitted (about 10–12)
2 Tablespoons Peanut Butter (or any nut butter)
1 tsp Vanilla Extract
Pinch of Sea Salt
1-2 Tablespoons Cacao Powder or Unsweetened Cocoa Powder
1–2 Tablespoons Plant-Based Milk (if needed for blending)
1/4 cup Mini Vegan Chocolate Chips or Melted Dark Chocolate (for topping or coating – optional)
Optional Caramel Boost (Layering)
1 Tablespoon Maple Syrup
1 Tablespoon Nut Butter
Pinch of Salt
Instructions
If your dates are dry, soak them in warm water for 10 minutes, then drain.
In a food processor, add the dates, peanuts, peanut butter, vanilla, cacao powder, and a pinch of salt.Blend until the mixture is crumbly but sticky. If needed, add a splash of plant milk to help it come together.
Add a bit more cacao for richness, or a drizzle of maple syrup if you want it sweeter.
Scoop out and roll into bite-sized balls. Press in extra chopped peanuts or mini chocolate chips on top if you like.
Mix together the maple syrup, nut butter, and salt. Drizzle on top or stuff a tiny bit inside each ball for that gooey caramel bite!
Pop them in the fridge for 20–30 minutes to firm up. Store in the fridge up to 1 week or freeze up to 2 months.
Makes about 10–12 balls
