Simple Ceviche


Hubby loves him some Ceviche! Every time we go to our local Mexican Restaurant in Las Vegas he has to order this dish, sometimes two servings, LOL. This recipe is just as good but cost less. You can make this recipe with scallops or any white fish for some variety.


Ceviche:

Ingredients:

1 lb. raw shrimp, scallops, or white fish, diced

1/2 red onion, diced

1 jalapeño, seeded and diced

1/4 cup chopped cilantro

2 limes, juiced

1 avocado, diced

Salt and pepper to taste


Directions:

In a large bowl, mix together diced seafood, red onion, jalapeño,

cilantro, lime juice, salt, and pepper.


Cover the bowl and refrigerate for 2-3 hours or until the seafood is “cooked” in the acid.

Before serving, mix in diced avocado.


Serve chilled as a refreshing appetizer or light meal.
