Ingredients
2 cups All-Purpose Flour
1 tsp Baking Powder (for extra fluffiness)
1/2 tsp Salt
3/4 cup Warm Water
2 Tablespoons Neutral Oil (avocado, grapeseed, or melted coconut oil)
1/2 cup Scallions (green onions), finely chopped
1 tsp Toasted Sesame Oil (for flavor, optional)

Instructions
In a mixing bowl, whisk together the flour, baking powder, and salt. Add the warm water and oil, stirring until a dough forms.
Transfer to a lightly floured surface and knead for about 5 minutes until the dough is smooth and elastic. Cover and let it rest for 20-30 minutes.
After resting, divide the dough into 4-6 equal pieces, depending on how many flatbreads you want.
Roll out a piece of the dough into a large rectangle (about ¼-inch thick). Brush with toasted sesame oil and sprinkle the chopped scallions evenly over the surface.
Roll the dough into a log, then coil it into a spiral shape (like a cinnamon roll). Flatten and roll it out again into a thin round flatbread. Repeat this step with the remaining dough pieces and place on a plate.
Heat a skillet over medium heat with a little oil. Cook each flatbread for 2-3 minutes per side, until golden brown and slightly charred in spots. Add additional oil to the pan after you fry each bread more better flavor and results.
