Roasted Veggie Quinoa Bowl


This Roasted Veggie Quinoa bowl is simple but so tasty and easy to make. Roasting veggies truly brings out the deep flavor from the vegetable making them taste so much better. I'm sure this dish will be your go to from now on.


Ingredients:

1 cup cooked quinoa

1/2 cup roasted sweet potato

1/2 cup roasted broccoli

1/4 cup sliced almonds

1/4 cup diced avocado

2 tbsp balsamic vinegar

Salt and pepper to taste


Instructions:

Preheat the oven to 400°F.

Cut sweet potato into 1-inch cubes and toss with olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.


Cut broccoli into florets and toss with olive oil, salt, and pepper. Roast for 15-20 minutes, or until tender.


In a bowl, combine the cooked quinoa, roasted sweet potato, roasted broccoli, sliced almonds, diced avocado, balsamic vinegar, salt, and pepper.
