Red Rice Salad

With the nutty fragrance of the red rice, fresh flavors of the chopped vegetables, and a salty and savory sauce, this dish is absolutely delicious, filing and plain genius. What more could you ask for in a meal?


Ingredients

For the salad:

1 1/2 cups raw red rice

2 cups water

1/4 cup goji berries

1 long green chili, finely sliced

3 spring onions, finely sliced

1 carrot, finely diced

1 red capsicum, finely diced

1 cucumber, finely diced

1 bunch of parsley, roughly chopped

salt and pepper


For the dressing:

1/4 cup tamari

2 tablespoons maple syrup

1 tablespoon apple cider vinegar

1 tablespoon sesame oil

salt and pepper

1/4 cup sunflower seeds (for the topping)

1/4 cup pumpkin seeds (for the topping)


Instructions

For the salad:

Combine all the dressing ingredients in a bowl and mix well.

Drizzle over the salad.

Serve the salad topped with the seeds.


For the dressing:

Cook the rice in a rice cooker and set aside. Or cook the rice in a pot via the absorption method.


Add the rest of the ingredients to a bowl, along with the rice, and mix well.

Season with salt and pepper.
