Quinoa Breakfast Bowl with Fruit and Nuts

Quinoa is a nutrient dense food and it's especially a great source of protein for those who are on a plant based diet. Most people eat it as a savory dish, but it's delicious as a sweet breakfast dish.


Ingredients:

1/2 cup cooked quinoa

1/2 cup unsweetened almond milk

1/2 ripe banana, sliced

1/2 cup mixed berries

1 tbsp chopped nuts (such as almonds, pecans, or walnuts)

1 tsp honey or maple syrup (optional)


Instructions:

In a bowl, combine the cooked quinoa and almond milk. Microwave for 1-2 minutes or until warm.


Top the quinoa with sliced banana, mixed berries, and chopped nuts.

Drizzle with honey or maple syrup, if desired.

Options:

Date & Walnut Quinoa Bowl

Add the cooked quinoa and unsweetened almond milk to the bowl with dash of cinnamon, cardamom and nutmeg. Heat up for 1-2 minutes or until warm. Top with chopped walnuts and dates.


Note: this dish is very versatile and you can add various topping like blueberries, cranberries, almonds, or anything you would like.
