Celebrate the flavors of fall with this cozy pumpkin spice oatmeal, made with real pumpkin puree. Pumpkin is loaded with vitamin A for healthy vision and skin, while the warming spices like cinnamon and nutmeg support immune function and add a comforting aroma. Ingredients
2 cups Instant Gluten-Free Rolled Oats
1/2 cup Brown Sugar or Coconut Sugar
2 tsp Pumpkin Pie Spice
1/2 tsp Salt (optional)
1/2 cup Dried pumpkin powder (or 1/2 cup canned pumpkin puree)
6 Tablespoons Maple Syrup (optional for serving)
Instructions
In a bowl, combine the instant gluten-free rolled oats, brown sugar, dried pumpkin powder, pumpkin pie spice, and salt (if using).
Mix until well combined.
Store the mixture in a jar and seal it tightly.
For each serving, add as much boiling water or hot non-dairy milk that you desire to 1/2 cup of the oat mixture and 1-2 tablespoons of pumpkin puree if you are not using the pumpkin powder. Stir well to combine, add optional maple syrup and enjoy.
I've used Regular Gluten Free Rolled Oats for this recipe and it worked just fine. You will need to grind up 1 cup additional oats then mix together with the 2 cups of Gluten Free Oats in the bowl. To prepare you may have to reduce the amount of water you add to the bowl by 1/2 as well. I buy mine at Costco for a better value.
