Ingredients

Vegan Roast Beef

1 cup Vital Wheat Gluten

2 Tbsp Nutritional Yeast

1 tsp Smoked Paprika

1 tsp Onion Powder

1 tsp Garlic Powder

1/2 tsp Ground Black Pepper

1/2 tsp Salt

3/4 cup Vegetable Broth

2 Tablespoons Soy Sauce

2 Tablespoons Tomato Paste

1 Tablespoon Liquid Smoke

The BBQ Sauce

1 cup Tomato Sauce

1/4 cup Apple Cider Vinegar

1/4 cup Maple Syrup

2 Tablespoons Soy Sauce

1 Tablespoon Molasses

1 Tablespoon Dijon Mustard

1 tsp Smoked Paprika

1 tsp Garlic Powder

1 tsp Onion Powder

1/2 tsp Black Pepper

1/4 tsp Cayenne Pepper (optional, for heat)

Instructions

In a large bowl, mix together the vital wheat gluten, nutritional yeast, smoked paprika, onion powder, garlic powder, black pepper, and salt.

In a separate bowl, whisk together the vegetable broth, soy sauce, tomato paste, and liquid smoke.

Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for a few minutes to develop the gluten.

Preheat your oven to 350°F (175°C).

Roll the dough out into a rectangular shape, about 1/2-inch thick.

Wrap the dough in foil or parchment paper, creating a packet, and place it in a steamer basket. Steam for about 30 minutes.

While the plant based beef is steaming, combine all the BBQ sauce ingredients in a saucepan over medium heat.

Bring to a simmer and cook for about 15 minutes, stirring occasionally. Adjust seasoning to taste.

Remove the steamed plant based beef from the foil and place it on a baking sheet lined with parchment paper. Brush a generous amount of BBQ sauce over the meat.

Bake in the preheated oven for about 20 minutes, then flip over and brush with more BBQ sauce, and bake for an additional 20 minutes.

Once the meat is done baking brush it with a final layer of BBQ sauce.

Allow it to cool slightly before cutting into it.

Note: I used my large rice cooker to steam this meat.
