Peanut Butter Sandwich Cookies

If you love those tasty Nutter Butter Cookies then you will absolutely love our Peanut Butter Sandwich Cookies! This recipe is from our Rosa's Keto Treats bakery and was a customer favorite. A true peanut butter lovers indulgence.


Cookie Dough Ingredients


3 cups Almond Flour


1 cup All Natural Peanut Butter (no sugar added)


1/2 cup Butter (softened)


2/3 cups powdered Monk Fruit Sweetener


1 tsp Baking Soda


2 tsp Vanilla Extract


Pinch of Salt


Peanut Butter Filling


1/2 cup All Natural Peanut Butter (no sugar)


1/4 cup powdered Monk Fruit Sweetener


2 tablespoons Heavy Whipping Cream


Instructions


Preheat oven to 350 degrees and line two large baking sheet with parchment paper and set aside.


In a large bowl using a electric hand mixer blend all the cookie dough ingredients together until well combined. Make 30 even sized ball shapes with the dough and place onto the baking sheets, about 2 inches apart. Press and flatten the dough balls to about 1/2 inch thickness.


Bake for 10-12 minutes until golden brown. Remove the cookies from the oven and allow to cool completely before filling them.


While the cookies are cooling in a medium bowl mix together all the peanut butter filling ingredients until well combined.


Take two of the baked cookies and place one teaspoon of peanut butter filling on one and put the other cookie on top and press them together to create a sandwich cookie. Repeat this process with the remaining cookies and peanut butter filling to make 14 cookie sandwiches. Enjoy.
