An Olive Oil Cake is such a delightful treat to have for an afternoon brunch with tea or a cup of coffee. Its a nice lightly sweetened dessert with lots of flavor.
Ingredients
3-1/2 cups Almond Flour
1/2 cup Monk Fruit Sweetener
1 tablespoon Baking Powder
1/2 cup Extra Virgin Olive Oil
4 large Eggs
1/4 cup Milk
1 large Lemon (juiced to get 2 TB)
Zest of 2 Lemons
1/2 tsp Lemon Extract
Instructions
Preheat oven to 350 degrees and oil a springform pan or round cake pan with non-stick spray.
In a large bowl with a electric hand mixer beat all the ingredients together for about 1-2 minutes to incorporate air into the batter. Pour the batter into the prepared cake pan.
Bake for 40-45 minutes until golden brown and set. Remove from the oven and allow to cool, enjoy.
