Nut Free Coconut Cookies

I created these Coconut Cookies at the bakery for my amazing customers who wanted a nut free treats and they loved them! We shared them at the local Mall and they were a hit! They are crunchy and full of flavor a perfect cookie for coconut lovers.


Ingredients


2 cup Coconut Flour


1/2 cup Butter (soft)


8 ounces Cream Cheese


2 large Eggs


1 cup Powdered Monk Fruit Sweetener


1 tsp Coconut Extract


1 tsp Baking Powder


Pinch of Salt


Instructions


Preheat the oven to 350 degrees and line a baking sheet with parchment paper, set aside.


In a large bowl using a electric hand mixer, blend the butter and cream cheese together until creamy, then blend in the eggs and then the rest of the ingredients until well combined.


Make a ball with about 2 tablespoons of the cookie dough, place on the prepared baking sheet and flatten to about 1/4 inch thin. Repeat this process with the remaining cookie dough.


Bake for 8-10 minutes or until golden brown. Remove the cookies from the oven and allow to cool and get crunchy. Enjoy.
