Nasi Goreng translates to “fried rice” in Indonesian and is a very popular dish throughout the island. You will come across many different variations, some with shrimp or chicken and some with just veggies, usually with a fried egg on top. It’s the ultimate comfort food for veggie and spice lovers.
Ingredients
coconut oil for sautéing
1 onion, finely diced
3 garlic cloves, minced
1 red chili, finely sliced
1 red capsicum, small dice
1 cup peas
1 carrot, finely diced
1 1/2 cups red rice, cooked
2 tablespoons tamari
1 tablespoon maple syrup
1 tablespoon sesame oil
4 fried eggs (set aside)
2 cups mung bean shoots
1/3 cup chopped raw cashews
salt and pepper
Instructions
Heat a large pan on medium-high heat.
Add the coconut oil, onion, garlic, chili, capsicum, peas and carrot
Season with salt and pepper.
Sauté for about 4-5 minutes, then add the rice, tamari, maple syrup, and sesame oil.
Mix well and season with salt and pepper.
Turn off the heat and serve with a fried egg on top of your rice.
Garnish with the sprouts and nuts. Enjoy!
