1 lb. Carrots, peeled and halved lengthwise
2 Tablespoons White Miso Paste
2 Tablespoons Maple Syrup
1 Tablespoon Olive Oil
1 Tablespoon Rice Vinegar
1/2 tsp Grated Fresh Ginger
Sesame Seeds and/or Chopped Scallions for garnish
Instructions
Preheat oven to 425°F (220°C).
In a bowl, whisk together miso paste, maple syrup, olive oil, rice vinegar, and ginger.
