Mini Corn Dog Poppers are perfect for a family gathering and the kids will love them! And the best part no one will know they are low carb and sugar free. Have these for game night as a quick and easy treat or an afterschool treat for the kiddos.
Ingredients
1-1/2 cups Almond Flour
1/4 cup Coconut Flour
1 tsp Baking Powder
2 tablespoons Monk Fruit Sweetener
1/2 tsp Salt
2 large Eggs
1/4 cup Butter (melted)
1/2 cup Sour Cream
5 Hot Dogs (I used Hebrew National) cut each into 4 to get 20 pieces
Instructions
Preheat the oven to 350 degrees and oil spray a 24 mini cupcake muffin pan, set aside.
In a large bowl whisk all the dry ingredients together. Add the remaining ingredients and mix until smooth. Evenly distribute the batter into 20 of the muffin cup sections then press a hot dog piece into the center of each cup.
Bake for about 10-15 minutes until golden brown. Allow to sit for about 2 minutes to set then remove from the pan and plate. Serve with sugar free ketchup and mustard. Enjoy.
