Maple Nut Delights

Born and raised in Niagara Falls Maple Nut candy has always been one of my favorite childhood treats. Even as an adult I would find joy in eating one of those delightful Goodies candies. Now that I'm living a healthier lifestyle I was so happy to be able to create this yummy treat to satisfy my maple nut candy craving. I hope you enjoy them just as much as I do.


Ingredients


2 cups Walnuts toasted and chopped


1/2 cup Almond Butter


1/2 cup Coconut Oil


1/2 cup Sugar Free Maple Syrup


2 tablespoons Flax Seed Meal


2-3 tsp Maple Extract


10-15 drops Liquid Monk Fruit or Liquid Stevia Sweetener


1/4 tsp Salt


Instructions


Place a silicone muffin pan on a small tray or plate, set aside.


In a large microwave safe bowl add the almond butter and coconut oil, microwave for 30 seconds and stir. Add to the bowl the sugar free maple syrup, liquid stevia or monk fruit, maple extract, salt, and flax seed meal, whisk until smooth.


Stir in the toasted walnuts until coated completely. Place bowl in the microwave and heat for 60 seconds. Remove and stir again. Evenly pour the maple nut mixture into 9 sections of the muffin pan. Place the muffin pan in the fridge for a few hours to set up or in the freezer for about 30 minutes. Enjoy!

Note: You can also use a mini muffin or any mini silicone pan to make bite size treats. Plus this will cut down your macros and carbs as well.


Keep stored in the fridge or freezer in a zip lock bag or airtight container.
