Do the poke! This recipe uses a variety of flavors to create a delicious seared ahi tuna poke bowl. A combination of healthy ingredients that are interchangeable. Try this bowl with a different type of fish, swap out the mango for pineapple, this list goes on and on.
Ingredients:
1 lb. sushi-grade tuna, diced
1 avocado, diced
1 cup cubed mango
1 cup diced cucumber
1/4 cup sliced carrots
2 tbsp. soy sauce
2 tbsp. sesame oil
1 tbsp. rice vinegar
1 tbsp. honey
1 tsp. grated ginger
Cooked brown rice, for serving
Directions:
In a bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and grated ginger to make the marinade. Add diced tuna to the marinade and toss to coat.
Cover and refrigerate for 30 minutes to 1 hour.
In another bowl, mix together diced avocado, diced cucumber, and diced red onion to make the poke bowl toppings.
To assemble the poke bowls, divide cooked rice between serving bowls.
Top with marinated tuna and poke bowl toppings.
Drizzle remaining marinade over the top of each poke bowl.
