Meatloaf is an all time comfort food for many people including our family. Sometimes people are put off by it because it tends to be too dry and lacking flavor. Well this meatloaf is juicy and packed full of flavor. I added spinach to my meatloaf recipes years ago to sneak in some veggies and my kids never could tell the difference. Give this recipe a try! Oh did I forget to mention its low carb too!
Ingredients
2-1/2 pounds Ground Beef I used 80/20
1-1/2 cups Bread Crumbs I used bread from this website
1 cup Spinach cooked and finely chopped
2 large Egg beaten
2 tablespoons Heavy Whipping Cream
1/4 cup Parmesan Cheese shredded
2 tablespoons Sugar Free Ketchup
1 tsp Onion Powder
1/2-1 tsp Salt
1/4 tsp Black Pepper
Instructions
Preheat oven to 350 degrees and place a oiled loaf pan on a baking sheet, set aside.
In a large bowl mix all the meatloaf ingredients together until well combined, don't over mix because the meat will come out tough. Place the meat mixture in the prepared loaf pan.
Bake the meatloaf for 40-55 minutes until fully baked through. Remove from oven and top with more ketchup and bake an additional 5-10 minutes to allow the ketchup to set and thicken on the meat. Remove from the oven and enjoy.
